This English Mint Potato Salad is the side dish I usually turn to when hosting barbecues or a summer gathering. It’s gluten-free dairy-free and can be vegan if you switch out the honey.
The best thing about this potato salad is that it is no mayo. Now I love homemade mayo to infinity and beyond but there is a little worry about spoilage in this heat. And often our barbecue/picnic/potluck foods are hanging out for a while in the sun.
So this potato salad is safe as houses. We just need:
– New potatoes
– Spring onions
– Apple cider vinegar
– Olive oil
– English Mint
